Carob / Locust Bean (Ceratonia siliqua)

40 SEK

SEEDS (15 pcs/bag) Common names: Carob, also called St. John's bread Scientific name: Ceratonia siliqua Family: Fabaceae Growth history & uses: Carob is an evergreen cultivated plant with a long history of various uses. Thousands of years ago, Carob – as the dried bean pods are called – was used as a counterweight when weighing gold and gemstones. The seeds inside the pod always weighed 0.2 grams, and this is where the measure carat comes from. Carob has also been used as a medicine for coughs and was sold as candy in pharmacies in the past. The pods have a natural sugar content of 30-50%, which is believed to be one of the reasons they were eaten as snacks in the Roman Empire. A well-known use today is as a substitute for cocoa, in roasted and ground form. Unlike cocoa, carob is free from caffeine and theobromine, among other things. Another common use today is the so-called locust bean gum extracted from the seeds. Locust bean gum is a thickening agent used in various foods, including ice cream and crème fraîche. Carob contains many different vitamins, e.g. vitamin A and B2, and has a flavor reminiscent of caramel. The Carob tree fixes nitrogen absorbed from air pores in the soil via nodules on the roots. This nitrogen is used for the tree's own growth and consequently enriches the rest of the growing site. Cultivation:
In its natural environment around the Mediterranean, the tree grows 10–15 meters tall and produces pods up to 25 cm long. In Sweden, it is best grown in a pot that is moved outdoors during the summer and overwintered in a cool place. Since the tree can tolerate temperatures down to about -8 ºC before it is damaged, it is theoretically possible to keep it as an outdoor tree in favorable locations in Sweden. But this is an experiment in itself and is recommended to be tested once the tree has grown somewhat. Otherwise, Carob is drought-tolerant and thrives in well-drained/rocky soil in sunny locations. Avoid moist environments and heavy clay soils. Water when the soil has dried out and add nutrients during the summer months if desired. Repotting into a larger pot is preferably done before the taproot (the thickest main root) has grown down to the bottom. As with all plants, limited space for taproot growth equals a significant decrease in the growth of the entire plant. Carob trees growing in their natural environment around the Mediterranean are high-yielding trees that can produce up to 400 kg of bean pods each year. Sowing: Soak the seeds in lukewarm water for 3 days before sowing. Sow in seed soil. Cover with 2 cm of soil. Keep the sowing moist. Germination time is about 2-5 weeks and the optimal germination temperature is 22-26 ºC. Features: Perennial: Perennial Growing conditions: sun Height: up to 15 m Germination time: 2-5 weeks

Caper Bush (Capparis spinosa)

SEEDS (20 pcs/bag) Common name: Caper Scientific name: Capparis spinosa Family: Capparaceae Plant history & use: Caper is a Mediterranean plant long cultivated for its edible unopened flower buds. After picking, they are then preserved in salt to remove bitter substances and enhance the tangy flavor. You can also let the flowers remain until fruit has formed and instead preserve the somewhat larger fruits in the same way. Preserving capers is very simple. It can be divided into 4 steps:

Place the fresh flower buds/fruits in a bowl with salt

Leave the flower buds/fruits in the bowl with salt for 3-7 days (or longer if desired).

Drain off the water that collects in the bowl and add a little extra salt each day.

When the preservation is complete, rinse off the salt from the flower buds/fruits and soak them in water. The soaking time is up to personal taste, but the shortest recommended time is 15 minutes. You can soak for several hours if you wish. Use a spoon and taste from time to time to find the flavor that suits you.

You can also preserve younger shoots and leaves from the caper bush. If you want to use somewhat older leaves and shoots, a tip is to blanch them in boiling water for 2-3 minutes before preserving. Mix your caper harvest with salt and vinegar, leave in the fridge about 1 month. Ready to eat. Cultivation of caper can be traced back as far as 7000 years ago in present-day Turkey, Jordan, and Syria. It is believed to have been used both for culinary and medicinal needs. In medicinal use, all parts of the plant were used, mainly as a digestive aid. In tropical and subtropical forest gardens (agroforestry), it is effectively used in the lowest layer as ground cover. Cultivation: In its original environment, caper often grows in high temperatures and soils with poor water and nutrient availability. A typical adaptation to a nutrient-poor environment is a very widespread root system, making it suitable as a soil binder at, for example, shorelines or eroding soils. Caper naturally spreads on rocky cliffs and slopes. It grows on the walls of many ancient fortifications in the Mediterranean. In Sweden, caper is best grown in a pot in bright locations and overwintered frost-free. Caper is characterized by an initially upright growth habit, later producing long horizontal side shoots that spread along the ground or hang down when growing on slopes and on walls. The bush is productive, and under optimal conditions, it can yield substantial harvests of up to 3000 buds per bush and season. In Sweden, one cannot quite expect the same results, but you can do your best to mimic the plant’s original environment by:

letting it stand in direct sunlight throughout the summer half-year,

letting it grow in well-drained Mediterranean soil, and

allowing the soil to dry out between waterings.

Feel free to use a large pot once the plant has grown. As described earlier, you harvest either the unopened flower buds or the fully formed fruits. If you let the flower bud open, the bush produces sweet-smelling, spectacular flowers. The caper bush blooms already the first year from seed sowing. The flower buds are traditionally picked in the morning when they seem to have their highest aromatic value. The caper bush can be propagated by cuttings. Sowing: Caper seeds germinate irregularly. To create better germination conditions:

Soak the seeds in lukewarm water for 1 day

Place the seeds in a sealed plastic bag between a couple of pieces of damp paper towel/damp sand and leave in the refrigerator for 4-6 weeks

Soak the seeds in lukewarm water again for 1 day as a final step

Sow seeds 0.5 cm deep in seed soil

The roots of young caper plants are unusually easily disturbed and can be damaged during transplanting. A good solution can be to sow the seeds in biodegradable seed trays which you can plant directly into a larger pot without disturbing the roots. Cultivation: In Sweden, capers grow best in pots in bright locations and are overwintered frost-free - but... we are experimenting with caper cultivation on a stone wall facing south. The plants are planted in the gaps between the stones, just as it often grows naturally on old castle walls down in the Mediterranean. They do not need much soil to spread out and become nice. The stone wall stores heat when it is warm and releases heat when the temperature drops, creating a somewhat more favorable climate. Capers are hardy down to -8°C, so with some winter covering in the form of jute cloth, this is not impossible in favorable locations in the country’s mildest parts. Karen Chili (Capsicum annuum)

SEEDS (10pcs/bag) Common name: Karen Chili, Wiang Ping Chili, Karen Chili, Karen Chili Pepper Scientific name: Capsicum annuum Family: Solanaceae Plant history & use: Karenchilin is named after and originates from an ethnic group in the mountainous regions between Burma and Thailand. The Karen people have lived in the region for over 2000 years and were one of the first inhabitants of the area. Karenchilin is hardier than other tropical chilies. The chilies typically have a high heat and a distinctive fruity and sweet flavor that really makes its mark in the dishes it is used in. Karenchilin is easily recognized by its green, yellow, orange & red fruits with a slightly dented surface. Fruits in different stages are often visible on the plant at the same time a little into the season, hence the colorful impression of the plant. Another characteristic of Karenchilin is that its fruits usually always point upwards on the plant. The Scoville Heat Units (SHU) of the Karen Chili can vary depending on growing conditions, but it typically ranges between 50,000 and 100,000 SHU. This places the Karen Chili at a medium to hot level on the Scoville scale, a level that most other Thai Chili peppers fall into. Culture: Karen Chili can be grown both in pots and in the garden. It needs well-drained soil and a sunny location to thrive. It thrives in a warm and humid environment - both during germination and growth. Under optimal conditions, it is a high-yielding variety that can produce an abundance of fruit during the summer months. However, it is one of the hardier tropical chili varieties in its ability to grow and produce in colder temperatures. It is not frost hardy. So it is grown as a perennial, which is recommended, it should overwinter in a temperature of at least 15 degrees. Can also be grown as an annual. The growth habit is bushy and plants usually reach a height of 60 cm. All chili peppers originate from Central and South America. The genus has since been spread around the world by colonists, missionaries and traders, and new species have emerged through adaptation to the environment. Chili peppers are generally easy to grow. They thrive in sunny, warm locations. They can be grown indoors in windows. All chili peppers are perennial and can produce fruit all year round if given the right conditions. Heat, light, light nutrition and moisture contribute to continuous growth & production of the plant. If you want the plant to produce fruit also during the winter months, use a grow light to supplement the sunlight, possibly grow only under grow light. Keep the soil evenly moist and allow it to dry out slightly between waterings. Fertilize 2-3 times a week to ensure abundant fruit production. The fruits range in color from green (yellow-orange) to red. The fruits can be eaten at all stages of maturity. 2-6 cm. Sowing: Pre-grow indoors at the beginning of the year. Place the seeds in lukewarm water 1 day before sowing. Moisten the soil and press the seeds lightly against the surface. Cover with 1 cm of soil. Place in bright light and keep the seeds moist. Chinese Flowering Dogwood 'China Girl' in various sizes 40-80 cm (Cornus kousa var. chinensis)

From 585 SEK

Chinese Flowering Dogwood of the variety 'China Girl'

Height: 40-50 cm (C5 pot)

Height: 60-80 cm (C5 pot)

The picture is only an example and does not represent the exact size of the different varieties Common name: Flowering Dogwood Scientific name: Cornus kousa Family: Cornaceae Plant history & use: Flowering Dogwood is a dense, small bush tree originating from Northeast Asia. In spring, it produces numerous bright white flowers that brighten shaded areas in the garden. At the end of summer, the tree bears peculiar pink-red edible fruits about 2-3 cm in diameter. These fruits can be made into jam or baked into pies. In Asia, juice is made from them and they are fermented into wine. The bark on thicker trunks flakes off and creates a beautiful pattern of varied colours. The leaves of the tree also turn a beautiful bright red/orange colour in autumn. Cultivation: Flowering Dogwood is a deciduous tree that thrives well in most parts of Sweden. The tree is relatively long-lived (50-150 years) and hardy against cold climates. Unlike many plants, Flowering Dogwood thrives well in shady locations. It also prefers to be sheltered from wind. When the tree stands in direct sun, it tends to produce more fruits, but of smaller size. An optimal growing place for the Flowering Dogwood is under one or several taller deciduous trees – which provide shade and add organic material to the soil – surrounded by additional vegetation in various layers. This contributes to the moist, wind-sheltered, and partly shaded environment in which the Flowering Dogwood grows best. The tree’s brightly shining blossoms can also brighten an otherwise shady "grove". Flowering Dogwood has low care demands and yields large recurring harvests every year. For the above reasons, Flowering Dogwood is an excellent tree to have in a food forest. If you do not have such a place on your growing area, a spot with morning sun and afternoon shade also works well. Characteristics: Perennial: Perennial Growing position: shade/partial shade Height: 2-3 m Growing zone: 1-3

Chinese Vegetable Tree: current height 15-30 cm Common names: Chinese Vegetable Tree, Chinese Toon, Toona, Cigar Box Tree, Chinese Mahogany, Chinese Toon, Onion Tree Scientific name: Toona sinensis / Cedrela sinensis Family: Meliaceae Growth history & use: The Chinese Vegetable Tree, or Chinese Toon, is a hardy tree with striking foliage that appears in pink-red tones in spring. In autumn, the leaves have a beautiful golden color. The appearance is just the icing on the cake; the tree has a wide range of uses. Young shoots and leaves are widely used in Chinese cooking. The leaves have a crisp texture and the taste is described as savory, nutty, and onion-like. Another source describes the flavor of the cooked leaves as a complex meal in itself—more specifically: like roasted beans with hints of onion and pepper. "Even those who do not like vegetables might enjoy Toon." The leaves are rich in vitamin A and contain about 6% protein, 1% fat, 6.6% carbohydrates, and 1.5% various minerals. The leaves are most often prepared as part of stir-fries or by steaming/boiling to eat as a side vegetable. They can also be fried in a tempura-like manner. Young shoots and leaves are also eaten in salads or pickled. In China, leaves and shoots are dried and then ground to be used as seasoning. The most common uses in the few Swedish homes where the plant is grown seem to be making broth from leaves and shoots, making pesto, or adding pickled leaves to a hamburger. A tea-like drink is made from leaves and shoots, sometimes also from the fruit. Leaves and shoots are heated briefly in a pan and then allowed to dry slowly. Roots, bark, and fruit have been used for thousands of years in traditional Chinese medicine. The wood is highly valued and resembles mahogany with its dark red color—it is used to make furniture, window frames, and more. The wood also has a delicate scent and is burned in temples as incense. Sometimes called synonymously the Cigar Box Tree because the wood was historically used to make cigar boxes. However, it was mostly the relative T. odorata that was used for this purpose. It produces beautiful white/pink flowers in large clusters hanging from the branches in August. The flowers are sweet-scented and skilled at attracting pollinators. In Chinese culture, T. sinensis is often used symbolically to represent the father figure. From a distance, Chinese Toon can sometimes resemble bamboo when it sends out root shoots and thus forms a grove. Standing under a large tree, the foliage almost looks palm-like against the sky. A striking plant in many ways. Cultivation: Originates from East Asia—from North Korea, through China all the way down to western Indonesia. Easy to care for and fast-growing. Place in a sunny spot. Hardy outdoors in zones 1-2. Has been reported to withstand temperatures down to -25ºC. Thrives best in moist, fertile, and well-drained soils. Tolerates most soil pH levels. Does not thrive in wet ground. Can be kept low-growing and topped for continuous growth of young shoots and leaves. Has good shade tolerance, but the result is slender, elongated trees that reach upwards toward the light. Placed in sun or shade, the tree will eventually reach about 15-20 meters in height. Chinese Toon can live over 100 years. Also top as a larger tree for abundant growth of young leaves and shoots. Sends out root shoots at adult age. Characteristics: Longevity: Perennial Growth position: sun Height: 15-20 meters Hardiness zone: 1-2

Chinese Judas Tree 40-50 cm (Cercis chinensis)

From 130 SEK

Chinese Judas Tree: current height 40–50 cm Common name: Chinese Judas Tree, Chinese Redbud Scientific name: Cercis chinensis Family: Fabaceae
History & use
The Chinese Judas Tree is an ornamental deciduous tree native to eastern China, where it has been cultivated for centuries both for its value as a decorative tree and for its edible seed pods. The species blooms on bare branches – even directly on the trunk – early in spring, usually in April, with dense clusters of purple-pink flowers growing directly on the trunk and branches. This phenomenon is called cauliflory and is especially striking in early spring. The flowers are edible and have a fresh, slightly tart taste. They can be used fresh in salads or pickled. The young seed pods are also edible and can be cooked like sugar peas. The seeds are edible as well. There is also some use of the young leaves in cooking in its native area.
Comparison with American Judas Tree (Cercis canadensis)
The Chinese Judas Tree (C. chinensis) and the American Judas Tree (C. canadensis) are closely related but differ in several important ways:

Growth habit: C. chinensis often has a bushier growth habit, while C. canadensis tends to become a tree with a more distinct main trunk. However, C. chinensis can be trained into a single-stemmed tree by cutting away low-growing branches on the trunk.

Leaves: C. chinensis often has thicker leaves than C. canadensis. The leaves are large and clearly heart-shaped on both, but the thickness of C. chinensis leaves makes the heart shape even more pronounced.

Flowers & fruit: The flowering has a more intense pink shade and is often even more abundant in C. chinensis, hence its high value as an ornamental tree as well as its ability to produce even more edible seed pods.

Hardiness: C. chinensis is hardy to zone 3, while C. canadensis withstands zone 4.

Garden use: C. chinensis is very suitable as a smaller tree or shrub in sheltered locations, while C. canadensis is often used as a solitary tree with a somewhat larger spread than the former.

Cultivation
Thrives in sun to partial shade in well-drained but moisture-retentive soil, preferably somewhat sandy mixed with humus-rich soil. Plant preferably in a sheltered spot, especially in colder parts of the country. C. chinensis is sensitive to winter wetness and benefits from some winter covering. However, if you have a non-water-retentive soil with high sand content, this should not be a problem. Also well suited for training into a standard in a larger pot due to its lower height compared to other Judas tree species. Prune carefully if needed – preferably late summer or early autumn – as spring pruning risks sap flow.
Characteristics
Perennial: Perennial Light conditions: Sun to partial shade Height: 2–4 meters Hardiness zone: 1–3 Use: Ornamental, edible flowers and pods, pollinator plant

In spring, it produces numerous bright white flowers that brighten shady parts of the garden. At the end of summer, the tree bears peculiar pink-red edible fruits about 2-3 cm in diameter. These fruits can be made into jam or baked into pies. In Asia, juice is made from them and they are fermented into wine. The bark on thicker trunks flakes off and creates a beautiful pattern of varied colors. The leaves of the tree also turn a beautiful bright red/orange color in autumn. An optimal growing place for flowering dogwood is under one or more taller deciduous trees – which provide shade and add organic material to the soil – surrounded by additional vegetation in various layers. This contributes to the moist, wind-sheltered, and partly shaded environment in which flowering dogwood grows best. The tree’s bright flowering can also brighten an otherwise shady "grove". Flowering dogwood has low maintenance needs and provides large recurring harvests every year. For the above reasons, flowering dogwood is an excellent tree to have in a food forest. If you do not have such a place on your growing area, a spot with morning sun and afternoon shade also works well. Its medicinal properties and adaptogenic abilities have made it popular worldwide for its potential health benefits. This plant is considered an adaptogen, meaning it can help the body adapt to stress and promote balanced and healthy physical and mental health. Korean Ginseng is often used to improve stamina, reduce fatigue and boost cognitive functions. Korean Ginseng is often used in various dietary supplements. Its roots have long been sought after for their health-promoting abilities and are also used dried in the form of tea, extract and powder. Ginseng tea is considered calming and can help reduce stress and improve sleep quality.
Cultivation:
Korean Ginseng is a perennial plant that thrives best in shady and moist environments. To mimic its natural habitat, it should be grown in a well-drained, moist soil with a pH level of around 5.5 to 6.5. It also prefers to grow in a cooler environment and can therefore thrive in shady areas, e.g. under trees and bushes. To visualize its optimal environment, think: ground vegetation in a forest grove. Korean Ginseng is very cold-resistant and can survive the winter in our Nordic climate. Plants are generally slow growing, but they can live to be over 100 years old. Harvesting of roots is usually done after year 4, which is also the year that plants usually flower and set seed. Of course, you can also wait to harvest even longer.
Sowing:

Place seeds in sand/sowing soil. Start by keeping the seed warm and moist at around +18 to +22°C for 2-4 weeks. Then you give the seed to a cold period (the fridge works well) for another 4-6 weeks. You can also consider sowing outdoors in the open field, in cold benches or cold greenhouses. This has proven successful even as late as March, April and May. Germination can take anywhere from 3 to 18 months. It must be a long and irregular process, but also an exciting one.
Characteristics:
Lifespan: Perennial Location: Shady & moist Height: 30-60 cm Germination Time: 3-18 months
