The leaves also contain thymol, the active ingredient in many mouthwashes we use today.</p> <p>Red Bee Balm has long been cultivated as a spice and medicinal plant as well as an ornamental for its intensely red flowers. The leaves have a fresh taste with hints of bergamot and are used for tea, salads, and as a seasoning in dishes. <p><strong>Chinese Judas Tree: current height 40–50 cm</strong><br><br><strong>Common name:</strong> Chinese Judas Tree, Chinese Redbud<br><strong>Scientific name:</strong> <em>Cercis chinensis</em><br><strong>Family:</strong> Fabaceae</p> <h4>History & use</h4> <p>The Chinese Judas Tree is an ornamental deciduous tree native to eastern China, where it has been cultivated for centuries both for its value as a decorative tree and for its edible seed pods. The species blooms on bare branches – even directly on the trunk – early in spring, usually in April, with dense clusters of purple-pink flowers growing directly on the trunk and branches. This phenomenon is called cauliflory and is especially striking in early spring.</p> <p>The flowers are edible and have a fresh, slightly tart taste. They can be used fresh in salads or pickled. The young seed pods are also edible and can be cooked like sugar peas. The seeds are edible as well. There is also some use of the young leaves in cooking in its native area.</p> <h4>Comparison with American Judas Tree (<em>Cercis canadensis</em>)</h4> <p>The Chinese Judas Tree (<em>C. chinensis</em>) and the American Judas Tree (<em>C. canadensis</em>) are closely related but differ in several important ways:</p> <ul> <li> <strong>Growth habit:</strong> <em>C. chinensis</em> often has a bushier growth habit, while <em>C. canadensis</em> tends to become a tree with a more distinct main trunk. The fruit has firm, juicy flesh and a crisp texture. The taste is sweet, with a slight tartness and very aromatic. The berries are resistant to rainy periods and do not crack easily.</p> <p class="p1">'Lapins' is a Canadian variety developed by Karl O. Lapins in 1965 by crossing the varieties 'Van' and 'Stella'. Outside their native environment around the Mediterranean, they also grow in, among others, the Netherlands, Germany, and the United Kingdom.</p> <p>Stone pine nuts have been used in trade for at least 6000 years and remain an important economic crop today. What are actually the seeds inside the tree’s cones are widely used in cooking, bread baking, and desserts. The nuts are very soft and give a sensation of almost melting in the mouth when eaten naturally. They have a typical nutty and slightly buttery taste with a delicate resinous aftertaste.</p> <p>A vanilla-like flavoring can be extracted from the wood pulp.</p> <p>Unripe stone pine cones can be ground and used as a spice.</p> <p>The tree produces abundant turpentine which acts, among other things, as antibacterial, pain-relieving for muscle aches, and expels worms (Grieve. Its beauty has made it a cherished tree worldwide.</p> <p>The silk tree has also been used for its edible and medicinal properties for centuries. Young leaves are eaten as a vegetable – boiled or steamed. They are described as having an aromatic taste. Flowers are also boiled for consumption. A historically well-known kitchen plant in its native regions.</p> <p><meta charset="utf-8">The plant’s bark, leaves, flowers & flower buds are used to make tea and extracts with reputed health benefits. Flowers are harvested when opening and bark is harvested in spring or late summer to be dried for later use.</p> <p>Tea made from the flowers is said to have a delicate, sweet taste and to relieve stress, tension, and even mild depression. This is likely one of the reasons the tree is also called "The Tree of Happiness."
