History & use
Yuzu is a citrus fruit originating from China and Japan, known for its unique taste and aroma reminiscent of a blend of lime, lemon, and mandarin. The peel and juice are used in cooking, desserts, and drinks. The fruit is essential in Japanese and Korean cuisine and is valued both fresh and as an ingredient in sauces and marinades.
Cultivation
Yuzu is one of the most cold-hardy citrus plants and withstands temperatures down to about –10 to –15 °C. It can be grown outdoors in the mildest parts of the country, such as Skåne, if the plant is winter-covered with jute fabric or similar protection. In colder areas, it is best grown in a large pot and overwintered frost-free. Thrives in sunny, warm locations in well-drained, nutrient-rich soil.
