Incense bamboo is a hardy bamboo species from China known for its edible shoots, which are used in many Asian dishes. It is also valued for its unique sandalwood scent released when the sun shines and there is a light breeze – even when freshly cut or crushed. The shoots are harvested young and prepared boiled, fried, or pickled. The stalk can also be used for building and crafts.
The emerging youngest shoots are harvested and peeled to eat like common bamboo. Usually sliced and blanched or boiled in various stews.
